

GRAPE DR. ENUF CAKE

This is a short one, and it's out of schedule, because the timing won't wait.
Tri-City Beverage rolled out Herbal Grape last Friday, the first new Dr. Enuf flavor in more than 20 years. The Generalist Store in Johnson City normally moves about three cases of Dr. Enuf across a whole weekend. Friday they were selling roughly two cases an hour and had to cap it at one per customer. The vending machine at Mid City Grill was cleaned out shortly after noon. Food City started on single bottles this week, with four-packs coming.
If you got a bottle, you probably drank it standing up in the parking lot. If you got two, this is for the second one.
It's the 7Up cake your grandmother made, moved over to purple. Same bones, different soda.
For the cake
1 box white cake mix
1 small box (3.4 oz) instant vanilla pudding
3/4 cup Grape Dr. Enuf
4 large eggs, room temperature
3/4 cup vegetable oil
For the frosting
2 cups powdered sugar
2 tablespoons Grape Dr. Enuf
1 teaspoon fresh lemon juice
1 tablespoon milk, added slowly, only if it needs loosening
How to make it
Heat the oven to 325F. Spray a 10-cup bundt pan hard with a nonstick baking spray that has flour in it, and get into every groove.
Put the cake mix, pudding, eggs, oil, and soda in one bowl. Mix until it is thoroughly combined and smooth.
Pour into the pan. Bake 35 to 45 minutes, until a toothpick in the thickest part comes out clean. Cool completely in the pan before turning it out onto a cake plate. Rushing this is how you end up with half a cake on the counter and half still in the pan.
Whisk the powdered sugar, soda, and lemon juice in a small bowl. Add milk a little at a time until it pours the way you want it. Thicker is better. Pour it over the cooled cake and let it sit a while to set up. It won't harden all the way like a frosting.
Slice and serve.
Notes
White mixes usually call for egg whites only. Four whole eggs still works here and gives you a sturdier crumb, just a shade less white.
Keeps covered on the counter 2 days, in the fridge 5, or wrapped tight in the freezer 3 months. Serves 10.
